Vegetarian quinoa split-pea w ginger

A chilly morning here. Going to get some soup cooking and warm things up...brrrrrrrrr

I love split peas and always have some around. The garlic was at the farmer's market on Saturday.

Keep things easy with organic veggie or chicken stock. That dark flat thing is seaweed. Stick everything in the pot and cook it. Can't go wrong with these ingredients.

It will turn out perfect.

Cook time: 60 mins

Yield: 4-5 servings

  • 1 Tbsp coconut oil
  • 1 onion chopped
  • 1-3 garlic cloves chopped
  • 1 1/2 cup dry yellow split peas
  • 1 piece of kombu (dried kelp)
  • 1 potato chopped
  • 1 carrot chopped
  • 1/2 cup dry quinoa
  • Veggie stock (2 X 946ml tetra boxes plus 1/2 cup water)
  • Sea salt to taste
  • Fresh peeled ginger finely grated (piece about the size of a quarter)
  • 1 tsp turmeric
  • Add onion, garlic & coconut oil in a large soup pot on medium heat. Cook for 2-3 minutes. 
  • Add split peas, carrot, potato, quinoa, kelp. 
  • Cook, stirring occasionally for 4-5 minutes. 
  • Add stock and ginger, salt and turmeric. 
  • Bring to a boil then simmer for 1 hour or until split peas are soft.
